Refried Beans

Description

A healthy dish that is excellent on toasted garlic bread or in tortilla wraps with a green salad or stuffed zucchini (see recipe for stuffed zucchini) on the side.

1 pack pinto beans
½ tsp salt
1 tsp cumin
2 tsp chili powder
½ tsp hot sauce
4 cloves of garlic
½ tsp pepper
1 medium onion, chopped
2-3 tbsp olive oil
1 ½ cups chicken broth

Methods/steps

  1. Rinse the pinto beans following the directions on the pack.
  2. Cover the beans with water and simmer in a pot until soft, about 1½ to 2 hours hours.
  3. Keep adding water as they tend to dry out.
  4. Add 1 cup chicken broth at the end of cooking.
  5. Add spices and 2 cloves garlic while cooking.
  6. Saute onion and 2 cloves garlic in a frying pan with 2-3 tbsp olive oil.
  7. Mash the beans before taking out of the pot, then fry them in the pan with the onion and garlic for about 5 minutes. (I usually fry half the beans at a time.)
  8. Add a little chicken broth and/or water if the beans dry out.
  9. Serve and top with sour cream, green onion, chopped tomatoes and grated cheddar cheese.
