Potato egg salad

This salad is great for potluck dinners and as a side for lobster, fish and beef recipes. I always have it with steamed lobster. Delicious!

Everyday Recipes

6 medium potatoes
½ tsp sea salt
4 eggs
½ cup grated carrot
3-4 green onions
1 cup miracle whip



  1. Cook potatoes until soft.
  2. Boil eggs until hard, 7-8 minutes.
  3. Cut potatoes into chunks.
  4. Add grated carrot, leave some for garnish.
  5. Add chopped onions.
  6. Add chopped eggs.
  7. Add miracle whip and mix together with above ingredients.
  8. Top with grated carrot, chopped green onion and paprika

Cooking time: 20 minutes
