Macaroni and Fish Casserole

This recipe is a new take on just regular macaroni and cheese. I just added fish (cod or pickerel) and onion to the layers. I got this idea from my friend, Joan, and just loved it! Thank you Joan!

2 cups macaroni
3 tbsp butter
¼ cup flour
¼ tsp dry mustard
¼ tsp cayenne pepper
3 cups milk
½ tsp sea salt,
¼ tsp pepper
½ onion, chopped
2 cups grated cheddar cheese for sauce (save ½ cup for topping)
1 cup cheddar cheese for layers (cut in slices)
1 ½ cup bread crumbs
3 lbs fresh fish (cod or pickerel)


1. Steam fish in small amount of water. Add  sea salt.
2. Cook macaroni until soft and drain.
3. Flake fish, discard bones.
4. Melt butter in a saucepan and add flour. Add milk a little at a time until creamy. Stir over medium heat until thickened.
5. Add grated cheese, black pepper, cayenne pepper and dry mustard.
6. Layer in a 9 x 13 inch dish: cheese, cut in slices, macaroni, fish and onion.  Pour cheese sauce over the top.
7. Top with bread crumbs and grated cheese.
8. Bake in a 9 x 13 inch dish for 30 minutes at 350ºF.
