Pumpkin Cake

This cake is so moist and delicious that you won't feel guilty about eating dessert.

At a glance
Everyday Recipes

1 cup white sugar
3/4 cup vegetable oil
4 eggs
1 cup pure pumpkin
1 cup crushed pineapple
2 cups flour
2 tsp baking powder
1 ½ tsp baking soda
½ tsp salt
1 tsp cinnamon
½ cup raisins
½ cup coconut
½ cup walnuts


1. Mix the first 5 ingredients together.
2. Add the dry ingredients.
3. Stir in the raisins, coconut and walnuts.
4. Pour into a tube pan.
5. Bake at 350° for 45-50 minutes.
6. Top with a cream cheese frosting. (See recipe below)

Additional Tips

Cream Cheese Frosting

Whip with an electric mixer: 4 oz cream cheese, ¼ cup butter, ½ tsp vanilla, ½ cup icing sugar, fold in 2 cups of Cool Whip until creamy. Spread on top of cooled cake.
