Lemon Cheese Cake

This light and creamy dessert is quick and easy to make.

2 cups Oreo cookie crumbs
¼ cup butter
1 pkg (212 g) lemon pie filling
2 egg yolks
1 tbsp butter
1/3 cold water
2 cups boiling water
1 pkg Philadelphia cream cheese (250 g)
¼ cup icing sugar
2 cups coolwhip


  1. Rub softened butter in the cookie crumbs.
  2. Press in a 9 x 13 inch glass dish.
  3. Bake at 350 for 5-6 minutes.
  4. Whisk pie filling in a saucepan with 2 egg yolks and 1/3 cups cold water until dissolved.
  5. Add the boiling water and cook over medium heat, stirring constantly, until mixture thickens and comes to a boil.
  6. Remove from heat and cool.
  7. In a large bowl, combine cream cheese with icing sugar and ½ cup cooled pie filling. Whip with an electric mixer.
  8. Fold in coolwhip until cream cheese mixture has blended in. Do not over mix.
  9. Spread over cookie crumb bottom.
  10. Top with remaining lemon pie filling.
  11. Cool and cut into squares.

Baking Time: 5-6 minutes (bottom layer only)
