I hope you like my version of this recipe for bannock. I've tried to make it a little healthier than the original recipe. Enjoy!

Everyday Recipes
1 dozen squares

4 cups flour
4 tsp baking powder
2 tbsp sugar
½ tsp salt
¼ cup unsalted butter
¼ cup olive or vegetable oil
2 eggs
1/12 cups warm milk
½ cup mixed dried fruit, cranberries or raisins (optional)





  1. Mix dry ingredients and dried fruit together in a large bowl.
  2. Melt butter in a pot then add the milk until warm.
  3. Whisk the eggs, add the milk and butter mixture, add oil.
  4. Stir the egg mixture into dry ingredients. Form a soft ball with your hands. Add a little flour if too sticky. Do not overmix.
  5. Put dough into an ungreased 10x13 foil pan. Pat gently to spread.
  6. Bake at 350° for 35 minutes.
  7. Cut into squares and serve warm with butter.

Additional Tips

Note: For Orange, cranberry bannock, I use 1/2 cup dried cranberrries, 1 cup warm milk , 1/2 cup orange juice and 2 tbsp orange zest. Delicious!

Baking time: 35 minutes
