Cherry Cheese Cake

This is a light dessert, easy and quick to make. Simply delicious!

1 cup graham wafer crumbs
3 tbsp butter, softened
4 oz cream cheese
2 tbsp icing sugar
1 cup cool whip
1 can cherry pie filling


  1. Rub butter into graham wafer crumbs with your hands.
  2. Press crumbs into an eight inch square dish.
  3. Bake in a pre-heated oven at 350ºF for 5-7 minutes.
  4. Let cool.
  5. Mix cream cheese and icing sugar and beat with an electric mixer for 1-2 minutes.
  6. Stir in cool whip with the cream cheese mixture. Do not beat or over stir.
  7. Spread over the graham wafer crumbs in the dish.
  8. Top with the cherry pie filling.
  9. Chill 1-2 hours.

Preparation time: 26-30 minutes
Baking time: 5-7 minutes
Servings: 6-8

Note: Double the recipe for a larger cake and put into a 9x 13 inch dish.
