Shepherd's Pie

Shepherd's Pie is a complete meal that can be prepared ahead of time and is wonderful for dinner and company.

5-6 medium potatoes
2 lbs extra lean ground beef
1/2 medium onion, chopped
2 gloves garlic
2 tbsp fresh parsley or 1/2 tsp dried
1/2 tsp sea salt
sprinkle of pepper
1 tsp olive oil
1 tbsp butter
1/4 cup milk
1 egg beaten
1 can diced tomatoes (19 oz) or 1 can tomato sauce (14 oz)
1 1/2 cups frozen of canned corn
1 cup cheddar cheese


  1. Peel the potatoes, add ½ tsp sea salt, cover with water and cook until soft.
  2. While the potatoes are cooking, place the ground beef into a frying pan, add the grated garlic, ½ tsp sea salt and pepper. Fry until slightly brown.
  3. Puree the diced tomatoes in a blender. Add the olive oil, hot sauce and parsley.
  4. Add the pureed tomatoes or tomato sauce to the beef. Let simmer for 5 minutes.
  5. Drain the potatoes, mash and add the butter, egg, milk and pepper. Stir until creamy.
  6. Layer the beef, corn and mashed potatoes into a casserole dish or a small roaster pan. Top with the cheese.
  7. Bake at 350° for 30 minutes.

Additional Tips

Preparation time: 30-40 minutes

Cooking time:  30 minutes


Note: Sometimes I use peaches and cream corn on the cob (cooked and cut of the cob) instead of frozen or canned corn. It’s delicious!
