Stuffed Squid

There's nothing quite like the aroma of stuffed squid baking in the oven, or the taste. It's simply delicious. As children growing up in Newfoundland, we couldn't wait for our first meal of the season.

At a glance
Newfoundland Recipes

6 medium squid (skinned)
4 cakes hard bread (purity product)
1 tsp salt
½ tsp pepper
1 tsp savory
2 tbsp fresh parsley
3 tbsp butter
3 tbsp olive oil
1 chopped onion


  1. Cover hard bread with cold water and soak overnight.
  2. Next day, drain bread and mash.
  3. Add the remaining ingredients.
  4. Stuff the squid with bread stuffing.
  5. Place in a small roasting pan.
  6. Top with salt and pepper to taste, a little olive oil and 2-3 cloves grated garlic.
  7. Sprinkle with fresh parsley and savory.
  8. Cover and bake at 350 F for 40-45 minutes.

          Serve with potato salad and coleslaw.
