Light Fruit Cake

This is my favorite light fruit cake made with crushed pineapple and dried fruit. It is a very moist cake and freezes really well. I always make it for Christmas, but believe me, it's great at any time. This recipe was passed down to me by my Aunt Meta who has passed on but will always be remembered.

½ pack dates (chopped)
1 cup red cherries
½ cup green cherries
1 cup raisins
½ cup walnut pieces
½ cup dried orange peel
2 tbsp orange zest
1 can (19 oz) crushed pineapple with juice
1 cup butter
1 cup brown sugar
4 eggs
1 tsp vanilla
2¾ cup flour
3 tsp baking powder


  1. Cream butter and sugar till light and fluffy. Beat in eggs one at a time. Add vanilla and crushed pineapple.
  2. Add flour and baking powder, a little at a time. Mix    together.
  3. Add prepared dried fruit and stir until coated with batter.
  4. Bake in a tube pan at 300ºF for 1½ hours or until cake tester comes out dry.


I usually get enough of the mixture for a small cake which I bake in a small foil pan for about 45 minutes.
