Lasagna, served with a green salad and garlic bread, is a very satisfying meal and can be served for lunch or dinner. It's also great for potlucks. Leftovers can be frozen to be eaten later.

2 lbs extra-lean hamburger meat
2 cloves fresh garlic
½ chopped onion
½ chopped green pepper
½ chopped red pepper
1 tomato, chopped
1 or 2 stalks celery
2 tbsp fresh parsley
½ tsp paprika
1 can diced tomatoes
1 can tomato sauce, low sodium
1 small can tomato paste
½ bottle spaghetti sauce (Healthy Choice)
2 tbsp olive oil
2 cups grated cheddar cheese
1 ½ cups grated monzrella
6 lasagna noodles (oven-ready or cooked)


  1. Brown hamburger meat in a frying pan.
  2. Add pepper, grated garlic, onion, peppers, tomato and celery.
  3. Blend diced tomatoes in a blender, add olive oil, parsley and paprika.
  4. Put meat, tomatoes, tomato sauce, tomato paste and spaghetti sauce in a cooking pot.
  5. Simmer in the pot for 10-15 minutes.
  6. Layer sauce, noodles, cheddar cheese, sauce, noodles, cheese and sauce.
  7. Top with monzrella cheese
  8. Bake at 350ºF for 35 minutes.

Do not add salt.
Serve with a green salad and garlic bread.

Baking time: 30 minutes
