Tomato Parmesan Fish bake

I prepare this dish often using pickerel since it is easy to get in Northern Manitoba where I work. This recipe is one that I created and is easy and quick to make. I love it! Cod would also be great in this recipe.

2-3 fresh cod or pickerel fillets
1 can diced tomatoes
1 tbsp olive oil
1 tbsp fresh lemon juice
¼ tsp sea salt,
¼ tsp pepper
2 tbsp fresh or 1/2 tsp dried parsley
3-4 tbsp grated parmesan cheese
½ onion, chopped


  1. Cut fish in pieces and place in a 9 x 13 inch dish.
  2. Add chopped onion. Sprinkle with a little sea salt.
  3. Blend diced tomatoes in a blender. Add olive oil, lemon juice, pepper and parsley.
  4. Pour over fish. Top with grated parmesan cheese.
  5. Bake at 350 degrees F for 35 minutes
  6. Serve with rice, green peas and pineapple coleslaw.

Preparation time: 20 minutes
Baking time: 35 minutes
