Description

Drawn butter is a sauce usually served with fish and brewis. It adds a great flavor to this dish. Drawn butter is used sometimes as a substitute for scrunchions (fried salt pork fat).

½ cup butter
½ medium onion
2 ½ tbsp flour
1 ½ cups hot water
Salt and pepper to taste

This is my recipe for Drawn Butter:

Ingredients:

1/3 cup olive oil
1/3 cup Becel margarine
½ medium onion
1 or 2 cloves garlic
2 ½ Tbsp flour
1 ½ cup hot water
2 tbsp fresh parsley
¼ tsp sea salt
¼ tsp pepper

Methods/steps

  1. Melt butter in a small saucepan.
  2. Add chopped onion and cook for a few minutes over low heat.
  3. Add the flour and blend thoroughly.
  4. Add hot water and cook until thickened, stirring constantly.
  5. Add salt and pepper.

This is the original recipe and is served over fish and brewis.

  1. Melt Margarine in a small saucepan.
  2. Add chopped onion and sauté until cooked.
  3. Add grated garlic.
  4. Add olive oil.
  5. Add flour and blend thoroughly.
  6. Add hot water and cook until thickened, stirring constantly.
  7. Add salt, pepper and parsley.
