Fish and Brewis

Fish and Brewis is made with fresh or dried salt cod & Hard Bread.  Note: Hard Bread is a purity product made in St. John’s, NL   It is also available in specialty stores in some cities.

Newfoundland Recipes

2-3 cakes Hard Bread
1 small dried salt cod (3-4 lbs)
4 potatoes
2 cups cubed salt fat pork
1medium onion
½ tsp salt
½ tsp pepper


  1. Place Hard Bread in a medium pot and cover with water. Soak overnight.
  2. Next day, do not drain water, add ½ tsp salt to Hard Bread and bring to a near boil. Do NOT boil.
  3. Drain and keep hot.
  4. Cut dried salt cod into serving pieces, cover with cold water, and soak over night.
  5. Next day, drain off water. Add enough cold water to cover cod and bring to a boil for 20 minutes or until cod flakes with a fork.
  6. Drain the cod.
  7. Remove the bones from the cod.
  8. Serve with brewis (cooked Hard Bread).
  9. Fry the small cubes of salt fat pork until golden brown (scrunchions).
  10. Add chopped onion to the scrunchions, turn the pan down on low heat or off, and sauté the onion.
  11. Add pepper.
  12. Serve over fish, brewis and boiled potatoes

Additional Tips

Preparation time: 30 minutes
Cooking time: 20-25 minutes
Servings: 4

Note: Fresh cod or any other white fish may be substituted for salt cod. Boil, fry or bake
15-20 minutes. Serve with brewis, potatoes, scrunchions and onions.

Drawn butter may also be used to pour over fish and brewis, instead of “scrunchions”. See my recipe for Drawn Butter, below.

For a healthier choice: Instead of using “scrunchions”, sauté onion in ½ cup olive
oil. Add pepper, parsley (fresh or dried), and 2 cloves grated garlic.
Sometimes I use a little butter and olive oil.
