Hawaiian Meatballs

This is one of my favorite meatball recipes and can be easily changed to beef, chicken or pork. I usually serve it over brown rice with steamed broccoli as a side dish.

2 lbs ground beef
2 eggs
½ cup bread crumbs
2 cloves garlic
¼ tsp sea salt
¼ tsp pepper
1 ½ cups pineapple tidbits or chunks
½ cup chopped green pepper
½ cup chopped red pepper
1 medium onion, chopped

3 tbsp cornstarch
1/3 cup brown sugar
¼ cup vinegar
2 tbsp soya sauce
2 cups pineapple juice


  1. Mix ground beef, beaten eggs, bread crumbs, garlic, sea salt and pepper together.
  2. Form into balls and place on a cookie sheet lined with parchment paper. Bake 10-12 minutes at 350 degrees. Turn them over halfway between baking.
  3. Combine cornstarch, brown sugar, vinegar, juice and soya sauce in a saucepan. Cook over medium heat and stir constantly until thick.
  4. Pour sauce over meatballs. Stir in peppers, onion and pineapple fruit.  
  5. Cook 5 minutes. (I sauté peppers and onion in olive oil for 2-3 minutes before adding to meatballs and sauce.)
  6. Serve over rice.

Additional Tips

Preparation time: 30 minutes
Cooking time: 10-12 minutes
Servings: 4-6

This recipe is also excellent with beef. Cut the beef in small pieces and fry in olive oil until tender, about 1 hour. Add salt, pepper and garlic.
Keep adding a little water until cooked. Add hot sauce, chopped vegetables and pineapple fruit. Cook for 5 minutes.
