Baked Beans

Description

Baked beans were served at least once a week in our house when I was a child growing up in Newfoundland. They were always served with fresh baked bread or rolls.

The original recipe was always made with salt pork fat. Today, I use olive oil for a healthier choice. I still remember the wonderful smell of baked beans being cooked with salt pork though.

Ingredients

3 cups white beans
⅓ cup ketchup
¼ cup mustard
½ cup molasses
¼ cup maple syrup(optional)
2 tsp sea salt
½ tsp pepper
2 tbsp olive oil
1 medium onion, chopped

Methods/steps

  1. Rinse beans well.
  2. Put beans in a large cooking pot, cover with cold water and boil for 1½ hours or until soft. Keep adding hot water so the beans won’t dry out.
  3. Do not drain the beans.
  4. Pour the beans into a medium size roaster.
  5. Add the rest of the ingredients to the beans and stir well.
  6. Bake at 350ºF for 1 hour.

Baking time: 1 hour
Servings: 6-8
