Newfoundland Recipes - Beans & Peas

Baked beans were served at least once a week in our house when I was a child growing up in Newfoundland. They were always served with fresh baked bread or rolls.

The original recipe was always made with salt pork fat. Today, I use olive oil for a healthier choice. I still remember the wonderful smell of baked beans being cooked with salt pork though.

In the past, in Newfoundland peas soup was served every Saturday in most households for dinner or supper. I never tired of it and still love it today. It's delicious served with dumplings.

Dumplings are usually added to peas soup or jiggs dinner during the last ten minutes of cookiing and is usually served as a substitute for bread or pastry. They are quick and easy to make. Enjoy!
