Blueberry Cake and Custard

Description

Blueberries grow wild in Newfoundland. Every fall my mother would make Blueberry Cake with freshly picked blueberries. Custard was served as a topping with this dessert. Blueberry Cake and Custard was usually served, at least in our house, after a Stuffed Squid dinner.

Ingredients

⅓ cup butter
½ cup sugar
2 eggs
1 tsp vanilla
1½ cups flour
3 tsp baking powder
¼ tsp salt
1 cup blueberries

Methods/steps

  1. Cream butter, sugar and eggs with electric mixer. Add vanilla.
  2. Add dry ingredients alternately with 1/2 cup milk.
  3. Add berries and mix lightly.
  4. Put into a greased small loaf pan.
  5. Bake at 300ºF for 45 minutes or until done in the middle. Test with a cake tester.

Preparation time: 20 minutes 
Baking time: 45-50 minutes
Servings: 6

Recipe for custard to serve with the blueberry cake.

Ingredients:

2 Tbsp Bird’s Custard powder
¼ cup milk
2 tbsp sugar
2 cups milk

 Directions:
  1. Mix custard powder with ¼ cup milk until thoroughly dissolved.
  2. Pour 2 cups milk into a large glass bowl.
  3. Add sugar. Stir until dissolved.
  4. Put milk in the microwave for 3 minutes.
  5. Add custard powder and milk.
  6. Return to microwave for 1 minute. Take the custard out and stir. Do this for another 2 or 3 minutes stirring after each minute until custard has thickened.
  7. Let cool to luke warm.
